Jebba Hubba, Hubby, Baby Bubba and the Kitty Combo!

My boss and I have once again entered the Battle Royale on the istockphoto website. My boss “D” encourages this creative time and is cool with me using part of — or the whole — day to get my entry just right. I think I used at least two almost full days fiddling with it. We critique each other’s work and give suggestions if need be… mostly I just say “Oh wow – you are totally gonna win!” and then ask him “Do you think mine is too weird?”
(Just for clarification for those of you who might not know me that well.. I say “Oh wow – you are totally gonna win!” because I really mean it. I am always completely shocked when I see how good “D’s” entry is.

Istock changed it up this year from previous years… but basically we were given about 10-12 “Seed” images and told to be creative and make whatever we wanted! They have a very loose judging criteria but its based on things like creativity & originality, execution & technique, use of elements and composition. As you will see my boss and I used a completely different set of images from the 10-12 that were available and came up with very different ideas.

109 people entered, which is only about 8 or so less entries than last year (you can view here) and each entry is unique. “D” and I ranked the other entries by pulling out the “BEST” and the “CRAP” first. Then we went through the middle of the pack with my other boss “A” and decided if they were better or worse than our entries. It’s all very scientific and unbiased… Because there are only three of us we tried to use a 2 out of 3 vote but for some reason my vote was overrode on a few occasions. (Mainly I thought a couple were good because of personal preference/taste and “D” and “A” happened to disagree — but really it went both ways.) We ended up with about 7 “BEST”, a bit of “CRAP” and a lot of “Middle of the pack”. (Obvisouly the math doesnt add up to 109 — I told you it was VERY scientific.) We shall see how the cookie actually crumbles when judgment day comes.

Weekend Activities

Hubby and I had a nice weekend — I told Hubby it was “His Day” so he got to decide where we went and what we did. We hit up downtown Somerville, NJ and there happened to be a car show. We also went yard sale-ing and “down the shore”.

Downtown Somerville was a nice leisurely stroll. The weather was perfect and the cars were pretty cool too. A lot of the cars had lights underneath, and fancy paint jobs. My favorite was the yellow car you will see below with iridescent flames painted on it — oh and it had a corvette engine! Vroom Vroom!

We stopped by the music store and bought some used CDs.

Hubby and I enjoyed the car show, and walking around in the fresh air. And as an added treat — I busted out an impromptu rendition of “We are the Champions” in the parking lot – just for Hubby.

I am pretty sure he enjoyed it — Hey.. hey wait for me…

So then the next morning after sleeping until 8am we headed out to check out some yard sales (Hubby’s 2nd favorite hobby) and then we were on our way “down the shore”. We realized half way there that we had gotten caught up in finding yard sales and had taken the long way to the beach. We didn’t mind though because it was a beautiful day for driving.

When we finally got near the ocean we headed over a couple bridges…

And finally made it to the beach. We laid out the beach sheet, and we ready for some relaxing. Hubby had to check the temperature of the water — this is the best I could do as far as a picture. I was already nestled in for my long winter’s…. summer’s nap.

After our relaxing soak in the sun we went to Surf Taco (yummm!) for dinner before we met up with our friend Joe. We walked along the Seaside Heights boardwalk and stopped in a couple arcades to play games.

In the first arcade we got enough points for 2 Chinese Finger puzzle thingers and a beautiful ring for me. (Joe became a bit frantic when he REALLLLY couldn’t get the chinese finger puzzle off!! LOL)

In the next arcade we played Skee-Ball as well as other games and earned points for larger prizes. Skee ball balls are no longer wooden — they are some middle weight plastic crap!

Hubby got a snail – and an octopus who promptly attacked the snail.

Joe got a paddle-ball game but changed his mind and traded in for a water gun!

I got a couple prizes as well. I got a neon orange piggy bank and another prize that will remain a secret until I can devote an entire blog post to it. It’s that cool – trust me!!

The next day we did some yard work (I weeded everything in sight) and Hubby laid down a brick paver section near the shed. Phewwww – we were busy little bees. Good Weekend.

Sunday in the Sink

Like you already know from the previous post — I took an entire Saturday to bake all of the layers of the wedding cake. I triple wrapped them and put them in the freezer until they were needed. Well this weekend they were needed. It was time for Josh & Irene’s ‘Party in the USA’. My gift to them was a wedding cake and I wanted to make it extra special and completely delicious.

I brought all of the materials to my Parent’s house on Friday night so that Saturday morning I could get up bright and early and make the icing and assemble the cake. I set up my work-shop on her laundry table in the basement. I didn’t want everyone walking by saying..”Ohh what are you doing?”, or “Why does it look like that?”, or anything else so I basically hid away in the basement.

Now, don’t look to me for any real rules on how to frost/ice a wedding cake. I know I didn’t do it the proper way but I was working with the area and materials I had and I always make it work. I think if you were a serious baker you would have each layer “crumb coated” and then you would start to stack them BUT like I said I went ahead and did it my way.

*Also — a quick note about the middle piece in the large tiers. This is from the “heating core” I used in my 12″ cake pan to help make the cake bake evenly. You add batter to the heating core and replace it in the cake when it done baking like a cork. I think you can check out Wilton’s site for more information on that. And the lines on the cake are from my cooling rack — also, probably not the “professional” bakers way of doing things but it got the job done!

I started with the bottom 12″ tier and added a “dam” around the edge to keep the strawberry freezer jam filling in place.

Then I took my bag of freshly made freezer jam and I snipped off the tip and piped it onto the cake. Hubby smoothed it out and the first layer of the first tier was half complete.

I continued with the next too layers of the bottom tier and then it was time to add the dowel supports. Hubby had pre-cut them last week to my specifications and I let him help me add them to the cake. We were creating a solid base so that the other cakes didn’t sink into the center of the cake in a big mushy mess.

I continued on while Hubby stood by ready at a moments notice for when I need the next layer of cake to be unwrapped. We added the 1st layer of the middle tier and I once again made a dam for the filling. This time I filled it with a homemade french pastry cream and sliced fresh strawberries.

After we put the 2nd layer of the middle tier on the cake I was beginning to realize that the cake was massive. Hubby held the third layer in place while I looked at the cake trying to decide if we should forgo the third layer of that tier altogether. We ultimately decided that we would skip the third layers for both the middle and the top tiers. This cake was just getting too huge! We added a sharpened dowel right down through the middle of the cake to keep it from slipping and add a little bit ore support. (I am not sure why it looks like it is leaning in the picture — it wasn’t.)

We finished up the top tier with the same strawberry freezer jam filling and I finished up a nice crumb coat of icing. Hubby and I lifted the cake into the freezer chest – conveniently located in the basement right by my work table – and I let it sit in there for about 10 minutes to hardened the icing so I could apply the next coat.

I know that if I wanted to be completely obsessive I could have spent another hour smoothing and smoothing and smoothing the icing on the cake BUT I was happy enough with the cake being almost smooth and completely tasty. I had icing all over my hands (I was working on my own at this point – Hubby needed to get ready for the party) and I was under a deadline so I didn’t take many more pictures. I got started on the “topper” of flowers and the other scattered flowers and this was my favorite part. I added a couple sparkly butterflies as well and I was really happy with the results.

The Bride and Groom seemed to be really pleased with their cake and as they smashed the first slice in each others faces I heard them say — “…this is good cake!!” That’s what I wanted most — a delicious result!

Everyone ate every piece of the cake except a couple which they promptly took home a their seconds, and we wrapped up the cake topper for when Josh & Irene come back to visit in a year (possibly). This is what was left — destruction and all.

So, all in all let’s count up the totals of what was used in the cake making process. (Keep in mind two layers didn’t make it on the cake because of our executive decision, and I made two batches of icing but I only needed one and a little bit of the second.

Cake:
9 cups butter
15 cups of sugar
30 eggs
6 tsp vanilla
18 cups of flour
6.75 tsp baking powder
1.5 tsp salt
6 cups of milk

Icing:
24 large egg whites
6 cups sugar
20 sticks of butter
2 TBS vanilla

EEK!!!

I would do it again…

Butter Cake (Refer to http://www.wilton.com/ for baking times, and quantity needed per cake pan)
This cake has a firm, moist texture that makes it perfect for tiered designs. We’ve added almond flavor to give it a richer taste everyone will love.

Ingredients:
1 1/2 cups butter, room temperature
2 1/2 cups granulated sugar
5 eggs
1 teaspoon pure vanilla extract
3/4 teaspoon No Color Almond Extract
3 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
Makes: About 7 1/2 cups cake batter.

instructions
Preheat oven to 350°F. Spray pans with vegetable pan spray, or use Cake Release.

In mixer bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Mix in vanilla and almond flavor. Mix flour with baking powder and salt. Add flour mixture alternately with milk, starting with the flour; mix well. Pour into prepared pans.

Cool 10 minutes in pan. Loosen sides and remove. Cool completely before decorating.

Swiss Buttercream Recipe
(from Smitten Kitchen)

For a wedding cake (or most of one, depending on the size)
2 cups of egg whites (approx. 12 large)
3 cups sugar
5 cups butter, softened (2 1/2 pounds, 10 sticks)
1 tablespoon vanilla extract

Whisk egg whites and sugar together in a big metal bowl over a pot of simmering water. Whisk occasionally until you can’t feel the sugar granules when you rub the mixture between your fingers.

Transfer mixture into the mixer and whip until it turns white and about doubles in size. (Here’s a tip: when you transfer to the mixer, make sure you wipe the condensation off the bottom of the bowl so that no water gets into the egg whites. This can keep them from whipping up properly.)

Add the vanilla.

Finally, add the butter a stick at a time and whip, whip, whip.

Smitten Kitchen note: Do not have a panic attack when this takes a while to come together (though I did every time). One super-large batch took 15 minutes, but it did and will come together. Patience, young Jedis.

That’s right — all 9 layers are baked (triple wrapped in the freezer) and ready for this upcoming weekend…stay tuned!

Mrs & Mrs

Our friends got married August 1st – a day after we got back from our Vacation — it was a great time. Hubby danced with me alllllllll night. His super cool moves were stunning!!! The ceremony was short and sweet and both the bride and groom seemed very pleased with the whole celebration — and that is what matters most!

Congratulations and Good Luck to the new Mr & Mrs.!

Bountiful Harvest

I interrupt this summery Sunday to show you the succulent bounty we have harvested from our garden.

On Tuesday at 5:45 (Guhh – i know!!), Hubby and I got on a bus tour to the Grand Canyon West Rim Tour. I got us this tour as a gift to Hubby (and a guest – he took me!! LOL!) for our anniversary. The tour was a “luxury” bus ride to past the Hoover Dam (stopping at the look-out point) and a visit to the Hualapai Indian Reservation in Arizona and the Grand Canyon Skywalk that they have built. The bus ride was mostly uneventful on the way there. We saw the Joshua tree forest and few animals. We also had a couple of pit stops at out posts along the way. The Grand Canyon was amazing, and the skywalk was REALLY cool! I only wish there had been less people, or no people at all, so we could have enjoyed the view in silence. We weren’t allowed to take anything – including cameras) onto the skywalk so I have posted one of their images to give you the idea. After we took in the view of the “Eagle” (did you see it?) in the Grand Canyon we headed on a shuttle to other parts of the tour – the shuttles run from the skywalk to an outlook to a cowboy town. We were starving so we headed over to the Cowboy town for our BBQ lunch. We needed some hydration and cool air — it was another boiling day and the heat really takes a toll on us humid-weather people. The Cowboy town was kinda cute and we got to do some calf roping, panning for gold, hatchet throwing, and Hubby got thrown in jail too (don’t worry I bailed him out).

After all the beautiful sights, hot oven air, hatchet throwing, and shuttle bus riding we were ready to hop back on the bus and head back to Las Vegas, Nevada. Then we hit a bit of a snag…after we waited an extra half an hour for LATE people to come back to the bus we finally got on the road and then we blew a tire! Initially I smelled burning rubber and then I saw piece of tire flying by the bus window and then the bus pulled over to a stop and the voice of our friendly (although a bit odd) bus drive says “Well folks, looks like we had a blow out — enjoy this video.”

We waited for another half hour watching the history of Las Vegas video on the mini TVs while the repair men came and fixed the tire in another half hours time. The air conditioning was working well and I was just praying that we didn’t lose that too. The bus driver was very concerned about snakes in the desert so he didn’t want anyone to get off the bus. That was fine with me I much preferred the bus seat to the oven hot desert sand. Finally the tire is fixed and just as we all were thinking it was time to get back on the road again the repair man informs the bus driver that another tire will most likely blow out shortly if he doesn’t get it fixed. So now the bus driver has to drive the bus 2 minutes down the road to the repair station BUT he decided he will drop us off at a local store/motel/creepy as hell location and come back for us when the tire is fixed. I guess I was the only one who thought this was a bad idea — it was the beginning of a horror movie for real — because everyone cheered as if he had told them they had won the lottery.

This little store combination motel was in the middle of the desert with nothing else around and as I looked at the joshua tree needles, the trailer restroom with no running water, the dusty looking man who came walking out of the desert with a case of beer, and the empty road I realized I may just need to ration the sprite and bag of goldfish I had in my hands.

10 minutes later the bus drive came back! sigh of relief – we weren’t stranded in the desert anymore — we were going to make it out alive!!! We made our way back through the Joshua tree forest, the long stretches of empty desert roads, the Hoover Dam, and back into down town Las Vegas to the Excalibur hotel. We were practically the first stop on the bus drivers route and we could feel the other passengers on the bus staring us down – jealous of our good fortune at being the first ones off the bus! We ran inside to the first restaurant we saw and got some dinner!

So, like I said us girls went walking around and shopping for a little while before our dinner show (oooh more on the show a little later). We came across a shop with a myriad of super cool glasses that we had to model. If you look closely you will see sexy ladies, beer bottle, boobies, creepy skeleton men, and the many shapes of Mini Meg’s mouth making different sound effects for different glasses! LOLOL!

After I spent a little bit of money, and the boys were done “winning big” we met up by the fountain to head downstairs to the dinner show: The Tournament of Kings! I have been to this kind of show before but no one else had so we were all pretty pumped to bang our tankards of Ale on the table, be served by wenches, and watch the Knights on Horses! (side note: We didn’t have a wench. Instead we had a man-wench serving us.) We weren’t allowed to take pictures during the show because it could scare the horses and performers but I did manage to take these few before the show and without anyone noticing!

It was really fun cheering, banging on the table, watching the jousting events and sword fights and when they came around and took pictures we got a really great picture of the four of us (it’s going to be hanging on the wall soon) – it was a great time!
